If you and your crew are in the mood for a classic cocktail, the Bellini is a great choice! This Italian cocktail is made with a fruit puree and Prosecco. The traditional Bellini cocktail is usually made with peach puree, but you can choose any fruit you’d like. Other delicious options include strawberry, apricot, mango and melon. Plus, these drinks are typically served in Champagne glasses—so you can feel fancy while drinking them (*sips glass with pinky out*).

Bellini vs. Mimosa

You may be wondering “what’s the difference between a Bellini and a mimosa?” Though the two are similar, a Bellini is typically made with fruit puree while a classic mimosa recipe calls for fruit juice. Now, what’s the difference between a puree and juice? Fruit puree is made by either mashing, pressing or blending fruit in its entirety. On the other hand, fruit juice is made by extracting the liquid content from a piece of fruit. Juice is also sometimes diluted while a puree always stays a thicker consistency. 

A Bellini Cocktail Two Ways

A Bellini can be made two ways: with fresh fruit puree or with store-bought puree. We’re giving you a foolproof recipe for both options (because let’s be honest—we don’t always have the time to be making things from scratch). For this Bellini recipe, we’ll be using the traditional peach puree option. But you can easily swap peaches for any fruit you’d like!

Bellini Recipe With a Fresh Fruit Puree

Prep time: 5 minutes

Total time: 5 minutes

Serving: Makes approx. 6 cocktails

Ingredients:

  • 3 medium peaches 

  • 1 bottle of chilled Prosecco (can substitute with Champagne or another sparkling wine)

  • 1 tablespoon of sugar

  • 1 tablespoon of lemon juice

  • ½ cup of water

Directions:

  1. Make sure your Champagne is currently chilling in the refrigerator or freezer.

  2. Peel and dice the peaches. 

  3. Put the peaches, water, sugar and lemon juice in a blender. Blend on a puree setting until the peach pieces have blended and the consistency is smooth. 

  4. Fill an empty Champagne flute about ¼ of the way with peach puree. 

  5. Fill the Champagne flute to the top with Prosecco. 

Bellini Recipe With Store-Bought Puree

Total time: 2 minutes

Serving: Makes approx. 6 cocktails

  2. Fill an empty Champagne flute about ¼ of the way with peach puree.
