Ingredients:

  • 4 ½ cups chopped cooked chicken (or about five to six chicken breasts)

  • 4 ounces room temperature cream cheese

  • 1 cup cottage cheese

  • ½ cup sour cream

  • 1 can cream of chicken soup

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • 1 sleeve Ritz crackers, crushed

  • 5 tablespoons unsalted butter, melted

  • Frozen broccoli, drained canned green beans, or drained canned vegetable mix (optional)

Chef’s tip: If you don’t have time to boil or otherwise cook chicken, consider picking up a rotisserie chicken to cut down on prep time. Shredded chicken works well.

Preparation instructions

  1. Preheat your oven to 350ºF. While you’re waiting, grease a 9-by-13 inch casserole dish. (You can do this by putting a bit of butter or oil on a paper towel and spreading it around the dish. Alternatively, you can use cooking spray.)

  2. In a large bowl, combine the chopped chicken, softened cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup.

  3. (Optional) If you plan to make a recipe for chicken casserole with vegetables, you can mix those veggies in now. If using a canned variety, be sure to drain the vegetables well before folding them into the chicken and cheese mixture. If using frozen veggies, thaw them and press out any excess liquid before combining them with the other ingredients.

  4. Spread the cheese and chicken mixture into the baking dish.

  5. Mix the crushed Ritz crackers with the melted butter, and then sprinkle a layer of this mixture over the contents of the baking dish.

  6. Put the casserole in the oven and bake (uncovered) until bubbly and crispy, roughly 30-40 minutes.
