Ingredients
16oz Chicken Breast
Extra Virgin Olive Oil
1lb Russet Potatoes
6oz Baby Carrots
8oz Sliced Bacon
1 Lemon
5oz Baby Spinach
8oz Broccoli
Instructions
Salt and pepper chicken breast to taste.
Wrap each piece of chicken breast in bacon, and place in a baking pan.
Dice the onions and potatoes, and add them into the pan with your chicken.
Add half a cup of water, and four tablespoons of olive oil.
Preheat your oven, and bake the chicken until it reaches an internal temperature of 165°F.
While it’s baking, prepare your vegetables.
In three separate pots/pans, blanch your spinach, carrots and broccoli.
After they’re done, season with salt, pepper, and olive oil to taste.
When the chicken is done, serve together.
