Ingredients
16oz Rigatoni Pasta
2 Tomatoes
8oz Sliced Bacon
2lbs Onion
5oz Grated Parmesan Cheese
Instructions
Cut your bacon into small pieces.
Start to cook the bacon in a pan on low heat.
In the meantime, dice your bacon.
When the bacon is around halfway cooked, add the shallots to the pan.
As this cooks, cut your grape tomatoes in half.
When the bacon is cooked and the shallots are brown, add the tomatoes.
Let it cook on a medium flame for around 20 minutes, and be sure to stir every few minutes.
About 10 minutes after the sauce starts to cook, boil some water and salt generously.
When the water is brought to a boil, throw in your rigatoni.
When the pasta is almost done, add half a cup of pasta water to the sauce as well as salt and pepper to taste.
After the rigatoni are al dente, strain them and add them to the sauce.
Mix well and finish with grated cheese.
