I'm an Australian native who desired to be closer to the land and in 2014 I moved to Napa Valley CA and immersed myself in dry-farming a small block of grapevines organically by hand and making restrained style wines. It was farming that opened my eyes to what it really means to care for the land and work with real ingredients, and winemaking that piqued my interest into the nutritious side of fermentation. I specifically started fermenting ginger for my own gut health (what an awesome superfood!), combining it with foraged and seasonal ingredients and was blown away at the incredible taste and quality - real ingredients and absolutely no remaining sugar!? Then the Aussie in me said, “Geez, why isn’t there any alcohol in these superb and beautifully aromatic beverages, and why can’t I buy these?” And that’s when I decided to roll up my sleeves and craft these delicious ginger beverages. I love innovating in this space by bringing vibrant and aromatics flavors that open and enliven your senses and leave you with a memorable moment and wanting for more. We call it the magic of fermentation, which is the converting of all sugars to alcohol so that no sugar remains and the reason why our beverages are unique, balanced and memorable.
