SelvaRey is foremost a single-estate rum, as every aspect of production takes place in a lone location in the Panama jungles. From harvesting to bottling, each step of the process is guided by a single hand, that of Francisco "Don Pancho" Fernandez, the world's foremost Maestro Ronero. Known for his nariz dorada, or golden nose, he built his own distillery after mastering and redefining the Cuban style for decades. Nourished by mineral-rich soil and mountain springs, SelvaRey's sugarcane is hand-harvested using only the delicate first press, cuvee, of the juice. Fermentation is completed with a proprietary yeast derived from wild pineapples and the rum is distilled in 1922 antique copper column stills, imparting signature softness. SelvaRey is then aged in casks from well-respected cooperages of the U.S. and Europe. One of the greenest and most sustainable of any rum distillery, SelvaRey employs a pesticide-free process while practicing safe, healthy, and respectable labor conditions
